Baked Salmon with Honey Mustard and Pecan Panko Crust
Ingredients
- 2 T Dijon mustard
- 2 T unsalted butter
- 1 T honey
- 3/4 t kosher salt, divided
- 1/4 t freshly ground black pepper
- 1/4 cup panko
- 1/4 cup finely chopped pecans
- 2 t finely chopped parsley
- 4 6 oz (approx) salmon filets
- 1 lemon for serving (optional)
Instructions
- Preheat oven to 450° Line a baking sheet with parchment paper or you can just rub some olive oil or avocado oil onto sheet pan. In a small bowl whisk together the together the mustard, melted butter, honey, 1/2 t kosher salt and pepper.In another small bowl mix together the panko, pecans, parsley and remaining 1/4 t kosher salt.Lay salmon filets onto prepared baking sheet and spoon the honey-mustard mixture evenly on top of them. Sprinkle the panko-pecan mixture evenly on top of honey-mustard and just press slightly so it stays.Bake 7-10 minutes or til internal temperature reaches 125°-130°
This can be prepared up to about 3 hours ahead of time refrigerated.
